Our 5 Favorite Cookie Recipes

I love to bake! It’s one of my favorite things to do aside from photography. I enjoy trying new things or even trying to make old favorites even better. Is it a favorite hobby for me to do with the kids? My type A personality is working on that one, but they’re learning to love it just as much and I’m learning to deal with the mess. Today I’d love to share with you some of my family’s favorite cookie recipes so you can try one out and share them with your family.

Chocolate Chip Cookies

Who doesn’t love chocolate chip cookies? I know I can never pass one up. I’ve tried so many recipes over the years, but I’ve recently enjoyed making the chocolate chip cookie recipe in Joanna Gain’s Magnolia Table cookbook. Eric and the kids got the book for me last mother’s day and I’ve been trying various recipes here and there. This one is quick and easy and makes for an excellent post pizza night treat. My favorite chocolate chips to buy are the Trader Joe’s brand. They just taste better and they have a pretty sweet price point. I always keep a bag or two on hand. And, when in doubt, add more chocolate chips!

S’mores Cookies

This is my all time, favorite cookie recipe. I stumbled upon it on Pinterest several years ago and have been making it pretty religiously since. Do we need to sign up to bring cookies to a party? Done. Do the kids need treats for class? Done. Did we get invited to someone’s house for dinner and we offer to bring dessert? Done. I will never grow tired of this cookie! I always make a double batch, which generally makes my mixer overflow, but it’s worth it. It doesn’t help that I have an endless supply of dehydrated mini marshmallows that my mom brought out for us from E&S in Shipshewana (fellow Hoosiers know what I’m talking about). Give it a try. I promise it will not disappoint!

Peanut Butter Cookies

Is it possible to have heaven in the form of a cookie? Welcome to heaven! This recipe is from one of my favorite baking bloggers, Sally, from Sally’s Baking Addiction. Whenever I’m looking for something new, or a great classic, Sally’s is where I start. This recipe is the bomb. It’s not overly sweet and has the perfect amount of peanut butter. Be warned, it isn’t a quick one. It involves several hours of chilling time, so be prepared. But I’m not lying when I tell you it’s well worth it my peanut butter loving friends!

No Bake Cookies

Talk about a cookie you can’t really fail at making. It’s not hard to have a major cookie fail at this high altitude, but you really can’t screw this one up. This is another fantastic recipe from Sally’s Baking Addiction. This is one of my husband’s favorite cookies. He likes to remind me that I don’t make them enough. I haven’t made them much since I was pregnant with our oldest and decided I should throw out a recently made batch because of a peanut butter recall (you get a little funny about things when you’re growing another human).

Rice Krispie Treats

I know this isn’t technically a cookie, but I wanted to add something that my gluten free friends could enjoy too. Plus, I LOVE me some rice krispie treats. They have to be soft and gooey though, not hard and crunchy. I made this recipe one year for a party in my youngest son’s kindergarten class. When I picked him up after school that day several of the parents who attended the party found out I made these and quickly approached me to tell me they were the best rice krispie treats they’d ever had. The secret, you wonder, is double the marshmallows and butter.

For my Colorado friends, I don’t want to say I’ve perfected high altitude baking, but I’m getting there. This has been a great resource for me when it comes to altering recipes for high altitude.
